Ingredients
Wilde’s Recipe:
- 1/3 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons dijon mustard
Our additions:
- 1 clove garlic, minced (or 1 teaspoon jarred minced garlic)
- 1 teaspoon honey (is optional but provides great balance)
- 1/2 teaspoon salt
- fresh black pepper
Instructions
- Add all ingredient to a jar with a lid and shake until well-combined.
For a proper emulsion:
- Add the minced garlic, mustard, honey, and red wine vinegar to a bowl. Whisk to combine.
- Slowly drizzle in olive oil in a very slow stream and whisk quickly and continuously to emulsify. You’ll see the emulsification happening as the color will change and the dressing will thicken.
- Once emulsified, continue streaming in olive oil. It may appear that the ingredients have separated as you add more oil, however, if you keep whisking the ingredients will blend together!
- Use a bullet blender or immersion blender to emulsify this dressing, resulting in a creamier consistency.
Notes
For flavor variations:
- Add 1 teaspoon of dried or 1 tablespoon of chopped herbs.
- For a tangier dressing, add up to an additional 1 tablespoon of red wine vinegar.
- For a citrusy twist, add the zest of 1 lemon
Storage:
- This will keep for 7 days in the refrigerator but will likely have separated. Use a whisk or immersion whisk to emulsify again, or if in a jar, shake vigorously by hand.
