Roasted Garlic Bread

Description

Roasted garlic bread is a warm and comforting side that pairs perfectly with so many entrees: pizza, pasta, soup, salad, proteins, risotto, lasagna– the list goes on and on! This recipe gives all the tips and tricks to make your own at home in the oven.


Ingredients

  • 1 loaf of bread (french bread, ciabatta, sourdough baguette)
  • 4 heads of garlic
  • 1 tablespoon olive oil
  • Salt and pepper
  • 1/3 cup butter, softened (regular, margarine or non-dairy)
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/4 cup cheese (dairy or non-dairy, optional)

Instructions

  1. Roast the garlic. Remove all extra papery skins from whole heads and chop whole heads in half. Place all heads cut-side-up on a sheet of aluminum foil and drizzle with olive oil, salt and pepper. Wrap the foil around them to cover, place on a sheet pan, and bake in a 350* oven for 45 minutes.
  2. Make roasted garlic butter. Once garlic heads cool to the touch, squeeze all garlic cloves into the butter. Mash cloves into the butter until well incorporated.
  3. Cut the loaf bread in half lengthwise and spread the roasted garlic butter over the loaf. Sprinkle with cheese if desired.
  4. Bake on a parchment-lined sheet pan at 400* for 10 minutes until the edges are golden brown. For extra crispy garlic bread, broil for an additional 2-3 minutes, watching closely.

You can use any butter or cheese in this recipe; to make a vegan version of this loaf simply use all plant-based ingredients! Spreadable margarine works well and doesn’t need softening time, but has a different flavor.

This is best eaten fresh out of the oven! Save any leftovers by covering and storing in the fridge for a couple of days- this is best reheated in the oven for a crispy bread.
