Start your sauce:

  1. Peel and chop the garlic. Heat a pan with the olive oil and sautee gently for 3 minutes.
  2. Add the canned tomatoes (and liquid) along with the ginger powder, vinegar, and chipotle peppers in adobo sauce.
  3. Simmer 10- 15 minutes, or until your desired consistency is reached, then reserve for later.

For the cheese:

  1. Add all ingredients to a blender and blend for 30-60 seconds.
  2. Pour mixture into a small pot and cook on medium heat for 5-7 minutes.
  3. You’ll notice the mixture begin to thicken, the tapioca starch stretchy action occurs as this begins to boil/bubble. Keep stirring for 1 minute after simmering then remove from heat.
  4. You can drizzle/clump this cheese on as is, or you can freeze it, grate it, and place it back in the freezer until you’re ready to use it.

  6. Top with fresh basil and fresh cracked pepper and enjoy!

** If you have a storebought vegan cheese or tomato sauce, you can use that instead of making your own.
